Iced Coffee Boba

Ingredients

  • 1/2 cup (50 g) tapioca pearls
  • 1/2 cup (100 g) white sugar
  • 1/2 cup (90 g) brown sugar
  • 2 teaspoons (10 g) Canadian sweetened condensed milk
  • 1/2 cup (125 ml) 2% Canadian milk
  • 2/3 cup (170 ml) long espresso or strong coffee
  • 5 large ice cubes

Preparation

Prepare a long espresso (approx. 170 ml) and leave to cool.

In a pot, bring water to a boil (at least 5 cups) and add tapioca pearls, stirring occasionally. Boil for 5 minutes. Turn off the heat and leave to rest in the pan for about 10 minutes.

Meanwhile, in a small saucepan, combine the white sugar and brown sugar with 1 cup (250 ml) of water. Bring to a boil and cook for 5 minutes. Stir occasionally.

Using a skimmer, drop the cooked tapioca pearls into the sugar water and let stand for at least 10 minutes. Put aside to cool.

In a bowl, combine the sweetened condensed milk and 2% milk.

Carefully pour into the glass in this order: the cooked tapioca pearls, the ice cubes, then the milk mixture, and top with the cold coffee.

Stir gently, and enjoy!
